Ingredients: 1 medium butternut squash, 1 onion, 2 cloves garlic, 4 cups vegetable broth, 1 cup coconut milk, 1 tsp smoked paprika, salt & pepper to taste.
Instructions: Roast cubed squash at 200°C for 30 mins. Sauté onion and garlic until soft. Add squash, broth, and spices. Simmer 20 mins. Blend until smooth. Stir in coconut milk. Garnish with roasted pumpkin seeds.
